ASHES & DIAMONDS' Crémant is a méthode champenoise wine made of Chardonnay and Pinot Noir grapes from select vineyards in Northern California. The base wine was fermented with native yeasts and aged in neutral French barrels for one year. It was then blended with reserve wine which had been barrel aged for as long as four years. This cuvée was tirage bottled in August 2021, then aged sur lie for 31 months and disgorged in March 2024. Aromatic and expressive, the resulting sparkling wine is rich with flavors of brioche, hazelnut, Honeycrisp apple and Asian pear, textured with a pearly mousse.
