ASHES & DIAMONDS’ Cabernet Franc “Mountain Cat Vineyard” comes from Lisa Chu’s second Mt. Veeder site. Just up the mountain from her “Saffron Vineyard,” “Mountain Cat” is located high above the fog inversion line at an altitude of 1,800 feet, where daytime temperatures are often 15 degrees cooler than on the valley floor. Similar to “Saffron Vineyard,” its thin soils are comprised of uplifted marine sediment and fractured shale, which produce low yields and small berries. Once at the winery, the grapes undergo native fermentation with no added sulfites, resulting in a living wine that is ephemeral yet dense, with red fruit and an inimitable mountain-savory character.
